Ginger milk curd 薑汁撞奶

Nothing beats this warm ginger milk curd on a cold winter day, like today. Although it looks like a really simple recipe using only three ingredients, it requires boiling milk skills. Yes, the milk boiling part is crucial. If that stage is done wrong, then the milk will not set. Always use a thermometer so as to get the milk to the perfect temperature (75-80 degrees C). 
I am not sure how popular this dessert is in the Western world but it is a very  popular dessert for people from the East. If you like ginger and milk, it is worth to have a go. I am sure you will love it! Enjoy!

1 Ginger
150ml Milk 
1 tbsp Sugar


1. Peel a piece of ginger and grate it. Squeeze the juice from the grated ginger and put 1-2 tbsp of ginger juice in a bowl. Set aside.
2. Dissolve sugar in milk and heat it to 75-80 degrees C. 
3. Slightly stir the ginger juice in the bowl. Pour the milk and sugar mixture into the bowl. Cover the bowl with a plate and do not touch it. Let it sit for about 10 minutes.
