One-pot rice: Chicken

We are only human. There are these days when you are really lazy to cook a meal yet you want something comforting to keep you warm in this cold weather (not building links to any alcoholic products LOL). If this lazy-cooking day greets you, welcome it. Because you are not going to let it defeat you! HA! In this blog-post and most probably the next one, I will be showing you a super easy almost effortless one-pot rice. I guess the name has explained it all, basically you just have to throw everything in the pot, or in my case, the rice cooker, and let it do the magic. 


2cups Rice
4 Chicken thighs
5 Shiitake mushrooms
2tbs Soy sauce
1tbs Sesame oil
1tbs Oyster sauce
1tbs Sugar
Spring onions


1. Soak the shiitake mushrooms in a bowl filled with hot water for 30 minutes. Meanwhile, debone the chicken thighs and cut into chunks. Marinate the chicken chunks with soy sauce, sesame oil, oyster sauce, sugar, pinch of salt and pepper. Leave for 30 minutes or longer. You can even leave them in the fridge overnight.
2. In a non-stick pan, fry the chicken chunks. They do not need to be cooked thoroughly because they will be going in the rice cooker later. Chop up the shiitake mushrooms and throw them in the pan. Stir fry for 30 seconds or so. Turn off the heat.
3. Prepare rice according to the package instructions. Pour the chicken and mushroom mix (and any juice) into the rice cooker. Press the button and get your rice bowl and chopsticks ready. Garnish with some chopped spring onion.
